Here is a real food salad with boiled spelt. ( From Wikipedia: “Spelt is a hexaploid species of wheat. Spelt was an important staple in parts of Europe from the Bronze Age to medieval times; it now survives as a relict crop in Central Europe and northern Spain and has found a new market as a health food.”)

You need:

2 cupes boiled and cooled spelt

1 red bell pepper, cleaned and diced

1 apple, cleaned and diced

1 cup edamame beans, stringed

2 spring onions, cleaned and diced

2-3 carrots, cleaned and diced

1/2 cup roasted pumpkin seeds

Dressing:

2 teaspoons liquid duck stock concentrate

2 spoons olive oil

1 teaspoon vinegar

1 spoon agave syrup

1 clove garlic

To make:

Mix everything and let it rest for 30 minutes – 1 hour to really soak up the dressing and let the flavours soak in and blend.

It can easily be a meal in itself or you can add some flakes of hard cheese, seared chicken breast or poached salmon.

Ta-daaah!

(You can vary this endlessly – use couscous, regular wheat or bulgur, lentils or chickpeas, add other veggies and any number of herbs… Well, then it wouldn’t be this, would it now?)
